Pineapple Lime Smoothie: "The Green Gator"




A warm spring day just wouldn't be the same without a smoothie!  And, why not bring out the crystal?!  I'm learning that since most of our entertaining occurs on paper plates sitting around the fire pit, I might as well allow the kids to use Mama's "Fancy Glasses"...which leads to practicing good manners in addition to feeling extra special!

"The Green Gator" is, undeniably, the most exciting smoothie I've created in the Vitamix recently.  Why is it called The Green Gator?  Well....because in order to get my kids as excited about drinking green smoothies as I want them to be, we come up with some pretty exciting, if silly, names for our various recipes.  This just happens to be one of the "normal" ones.  :-)  So...here's the recipe:


2 cups fresh spinach
2 cups frozen pineapple chunks
2 tablespoons limeade concentrate
2 teaspoons honey
2 cups ice
1-2 cups water (depending on desired consistency)
Add to blender in the order listed, and blend until smooth!
*Garnish with a lime slice and pineapple leaf, if desired

(Note: To make the smoothie into more of a protein snack, you can add 1 cup Non-Fat Plain Greek Yogurt, and increase the honey to about 1 tablespoon to compensate.  The flavor of the smoothie doesn't change much, but it is a bit creamier.)



And...here's the result!  Happy kids drinking their spinach! What more could a Mama ask for?! :-)  Enjoy!
